Baked Brie stuffed with Apricots, Walnuts and Honey

Ingredients:

1 wheel brie

4 sheets phyllo pastry, thawed

1/2 cup butter, melted

¼ cup Dried Apricots, diced

¼ cup walnuts

Honey to drizzle


Method:

Preheat oven to 350.

Dice apricots, chop walnuts and set aside.

Melt butter.

Remove phyllo from package and place under a damp towel.  Working with one sheet at a time, brush each sheet of phyllo with butter, covering sheet.  Lay next sheet on top, then repeat.  Once all four layers have been completed, place brie in the middle of the phyllo sheets.  Top with apricots and walnuts.  Drizzle with honey.  Close up any way desired.

Note:  Only DRIZZLE lightly with honey – if you use too much it will seep and burn as you bake.

Bake in preheated oven for 20-30  minutes or until phyllo is golden.  Enjoy.
