Gumbo File, Ground – A ground leaf of the Sassafras tree native to the North American south, this herb is a contribution to the culinary world thanks to the Choctaw Indians!  Used widely in Cajun/Creole cuisines, this herb has a wonderful earthy, sweet flavor, and it also used as a thickener!
