Ajvar (Serbian Roasted Eggplant & Pepper Spread)


Ingredients:

· 4 roasted red peppers

· 1 small eggplant, roasted – skin removed (8 oz of pulp)

· 2 tablespoons green onions, chopped

· 2 tablespoons olive oil

· 4 cloves garlic, smashed

· 1 tablespoon sumac

· Juice of ½ lemon

· 1-2 tablespoons red wine vinegar

· ½ tablespoon sugar

· Salt and pepper


Instructions:

1. Combine all ingredients in a blender or food processor and process until desired consistency. Check for seasoning.
