Blackened Ribeye with Pimento Cheese Butter


Ingredients:


Pimento Cheese Butter:

· ½ C. mayo

· 1T + 1 tsp lemon juice

· 1 tsp pepper

· 1 tsp salt

· ½ T. sugar

· ½ T. whole grain mustard

· 2 T. Worcestershire

· 1 lb. shredded cheddar cheese

· ½ jar chopped pimentos


Combine all ingredients and form into a log. Refrigerate until ready to use.


For the Steak:

· 3 x 1 lb. ribeye steaks

· Butter, 1-2 T. per steak


  1. Season the ribeye with the Cajun seasoning and let it come to room temperature for 45 minutes to 1 hr.

  2. Preheat a cast iron skillet or grill pan, or saute pan. Add the butter and let it melt and almost smoke. Cook the steak on both sides to desired doneness on high heat to get that iconic blackened look.

  3. Serve steaks topped with Pimento Cheese Butter and enjoy!
