Caesar Salad Dressing

Ingredients:

· 2 cloves garlic

· 1/3 cup grated parmesan cheese

· Juice of 2 large lemons

· 2oz anchovy paste

· 2 coddled eggs

· Kosher salt, to taste

· Freshly ground black pepper, to taste

· Worcestershire sauce, to taste


Method:

1. Mince garlic. In a glass bowl, add minced garlic and anchovy paste and stir until combined.

2. Crack the coddled egg into the garlic-anchovy mixture and add the lemon juice. Beat until smooth.

3. Slowly add the remaining olive oil while whisking continuously.

4. Season to taste with Kosher salt, black pepper and Worcestershire sauce. Add the grated cheese.
