Ingredients:
· 2 cans chickpeas, rinsed and drained
· 1 cup peanut butter
· ½ cup flour (you can use GF if desired)
· 1 flax egg (see below)
· 2/3 cup maple syrup, agave or honey
· 1 tablespoon vanilla
· 1 teaspoon baking powder
· Pinch of salt
· 2/3 cup + ¼ cup chocolate chips
Instructions:
1. Preheat oven to 350°F. Grease and line a 11x7 or 13x9 pan with parchment.
2. To make the flax egg: Mix 1 ½ tablespoons flax and 3 tablespoons water together and let sit for 5 minutes or until thickened.
3. Add all ingredients except for chocolate chips to a food processor. Blend on high until smooth.
4. Remove blade and stir in 2/3 cup chocolate chips.
5. Pour into greased pan and smooth. Sprinkle remaining ¼ cup chocolate chips over the top.
6. Bake for 20-30 minutes or until browned on edges. Be sure not to overbake as it will dry out. Let cook for 20 minutes, cut and enjoy!
