Classic Creamed Spinach


· 1 T. butter

· 1 small shallot, diced

· 2 cloves garlic, minced

· Salt and pepper

· 1 T. butter

· 1 T. flour

· 1 C. + 4 T. heavy cream

· Dash of cayenne

· Dash of nutmeg

· 6 oz frozen spinach, thawed and drained

· 3 T. parmesan cheese

· Salt and pepper


1. In a large saute pan, melt the first 1 T. butter over medium heat. Add the shallot and garlic, season with salt and pepper, and saute until fragrant, about 3 minutes.

2. Add the second 1 T butter, and when melted, add the 1 T. flour and stir in with a wooden spoon so it doesn’t clump. Cook the flour for 2-3 minutes.

3. Reduce the heat to medium low and add the heavy cream, cayenne, and nutmeg. When thick, add the spinach and stir in well. Then add the parmesan cheese. Cook until the cheese has melted. Check for a final seasoning of salt and pepper.

4. Transfer to a small serving dish and serve hot!
