Coconut Milk Nutella Swirl Bread



Ingredients:

For the bread:

· 2 ½ cups flour

· 1 cup sugar

· 1 ½ teaspoons baking powder

· ¼ teaspoon salt

· 2 eggs

· 1 cup coconut milk

· 1/3 cup melted butter

· 1 cup sweetened flaked coconut

· ½ cup Nutella

For the glaze:

· 2 cups confectioner’s sugar

· ½ cup sweetened flaked coconut

· 1 teaspoon coconut extract

· ¼ cup milk, more or less as needed


Directions:

1. Preheat oven to 375 degrees. Line and grease a 9x5x1.75” loaf pan.

2. In a medium bowl. Sift together flour, baking powder and salt. Set aside.

3. In a separate bowl, beat together the egg and coconut milk. Add sugar and stir until incorporated. Slowly add butter while whisking continuously.

4. Stir in flour mixture until just combined. Stir in coconut.

5. Microwave Nutella until warm and spreadable.

6. Pour 1/3 of the bread mixture into the bottom of the loaf pan. Add ¼ cup of the Nutella and spread out as much as you can. Add another 1/3 of the bread mixture, then top with remaining ¼ cup Nutella. Add last 1/3 cup of bread mixture.

1. Using a knife or skewer, put it through the bread to create a swirl effect.

2. Bake for 55-60 minutes. If bread has a nice firm crust on the top and if springy it is likely done. Let cool before removing from pan and drizzling with glaze.

3. To make glaze, mix ingredients together and drizzle over bread.

4. Enjoy!
