Ingredients:
· 2 T. butter
· 2 T. flour
· 2 C. milk
· Pinch ground clove
· Salt and Pepper
· 4 slices of bread
· 4 slices of ham
· 4 slices of gruyere
· Dijon Mustard
· Melted Butter
· Variation: Madame – 2 eggs
Preparation:
1. Prepare the béchamel by melting the butter in a saucepan. When the butter is melted, add the flour to make a roux. Cook the roux for 3-4 minutes to make a blonde roux. Add the milk, cloves, salt and pepper, and cook until thick.
2. Prepare the sandwiches by spreading the Dijon on two slices. Then place the cheese on top of the Dijon and then the ham. Brush each side with melted butter and toast in a pan on both sides.
3. When the sandwich is perfectly toasted, top with the béchamel and serve. Variation: Madame – top each sandwich with a poached or sunny side up egg.
