Ingredients:
1/2 bulb fennel, shaved, top fronds reserved
1/2 red onion, shaved
1/2 pomegranate, seeds removed
1 grapefruit, supreme + 1 1/2 tablespoons juice
2 tablespoons pomegranate molasses
1/4 cup walnuts, toasted & chopped
Pinch of sugar
Salt & Pepper to taste
Method:
In a bowl, combine the grapefruit juice, pomegranate molasses and sugar. Stir well.
Add the rest of the ingredients plus the reserved fronds from the top of the fennel. Toss well to coat.
Top with the walnuts. Enjoy!
