Green Beans & Mushrooms with Orange Vinaigrette


Ingredients:

· 2 tablespoons olive oil

· ½ lb green beans

· ½ lb mushrooms

· ¼ cup candied sliced or slivered almonds

· Salt & Pepper to taste


For the vinaigrette:

· 1 tablespoon orange juice

· 1 tablespoon rice vinegar

· 4 tablespoons olive oil

· 1 tablespoon chopped fresh herb of your choice

· 1 teaspoon whole grain or dijon mustard

· Salt & Pepper to taste


Method:

1. In a small bowl, whisk together vinaigrette ingredients. Set aside. This is a semi-stable dressing, so whisk again just before using.

1. Heat olive oil over medium-high heat in a skillet. Add mushrooms and saute until nicely browned, careful not to over stir. Once browned, add green beans. Cook until bright green with light browning.

2. Remove pan from heat and toss veggies with some of the dressing (use just as much as needed to lightly coat the veggies.

3. Top with almonds just before serving and enjoy!
