Horseradish Smashed Potatoes



2 russet potatoes, cut into large pieces

2 T. oil

1-2 T. (depending on preference) prepared horseradish

Salt and pepper

2 T. butter

Chives to top

Mix the potatoes with the oil and season with salt and pepper and bake on 400 until a skin has formed and the potatoes are cooked through. Transfer to a bowl and add the butter and horseradish and smash with a fork until the potatoes are just broken up. Top with chives.
