Ingredients:
· 1 large head cauliflower, cut into florets
· 3 T. oil
· Salt and pepper
· ½ C. cornstarch

· ¾ C. sugar
· ½ C. chili sambal
· ½ C. apple cider vinegar
· ¼ C. ketchup
· 2 T. soy sauce
· 1 spicy chile, red or green, sliced
· Salt and pepper
· 1 T. cornstarch + 1 T. water – stirred together
Method:
1. Place the cauliflower florets with oil and salt and pepper in a Ziploc bag. Shake well to toss/coat. Add the cornstarch and shake well to coat.
2. Gently remove the cauliflower from the bag and discard excess cornstarch that didn’t adhere. Place the cauliflower on a baking sheet and place in a preheated 425 degrees oven and bake for 15 minutes.
3. Meanwhile, combine the sugar, chili sambal, vinegar, ketchup, soy sauce, spicy chile, and salt and pepper in a saucepan. Bring to a simmer over medium heat and then add the cornstarch/water mixture. Continue to simmer until thickened. Turn off heat.
4. When the cauliflower is brown on the bottom (about 15 minutes), turn the oven to broil and broil the cauliflower until brown, about 3 minutes – depending on where the rack is in your oven.
5. When the cauliflower is brown on both sides, remove from the oven. Toss with the hot/sour sauce and serve!
