Lamb Souvlaki


Ingredients:

For the Greek Vinaigrette -

· 1/2 c. red wine vinegar

· 1 clove garlic, chopped fine

· 2 sprigs thyme, stripped

· 1/2 lemon, zested

· 1 T. honey

· 2 tsp. worchestershire sauce

· 1.5 tsp. oregano, dried

· 1.5 c. oil

· Salt and pepper

- Mix all together


Ingredients:

For The Souvlaki -

· 1 lb. Lamb Leg (or any other whole muscle), cut into pieces

· 1 green bell pepper, cut in large pieces

· 1 red onion, cut into 8 pieces


Preparation:

1. Soak the skewers in water for 30-45 minutes.

2. Reserve ¼ of the Vinaigrette for the vegetables.

3. In a bowl, combine the remaining marinade with the lamb pieces. Let marinate 2 hours – overnight.

4. Skewer the lamb, taking caution to not overcrowd the skewers, set aside. Next skewer the onion and bell pepper, on separate skewers. Brush the onion and bell peppers with the remaining vinaigrette.

5. Cook on medium high heat in a saute pan or a flat griddle. These also work great on a grill. Cook until desired doneness. Remove from skewers and serve with pita and tzatziki.
