Ingredients:
· 1 cup flour
· ½ tsp fleur de sel
· 1/3 cup sugar
· 2 tsp lavender
· ½ cup unsalted butter, at room temperature
· 1 tsp vanilla
· Fleur de Sel (for finishing)
Method:
1. Whisk flour and sea salt together in a bowl. Combine sugar, lavender and butter in a mixer and mix until creamed and fluffy. Add vanilla. Slowly add flour to the mixer and mix on low speed until it forms a dough. Shape the dough into a tube in plastic and refrigerate for 30 minutes.
2. Preheat oven to 350 degrees.
3. Remove the dough from the refrigerator and slice into ¼ inch thick cookies. Place on a greased or lined
baking sheet and place the baking sheets with the cookies in the freezer for 15 minutes.
4. Remove cookies from freezer and sprinkle with fleur de sel, sugar crystals or lavender flowers, if desired. Be careful not to get sugar crystals on the baking sheet as they will burn during baking.
5. Bake cookies for 12 to 15 minutes, until bottoms and edges are just barely golden brown.
