Ingredients
1 cup warm water
1 packet active dry yeast (.25 ounce)
2 cups all-purpose flour
1 cup cake flour
1 ½ teaspoon salt
Olive oil as needed
Instructions
Combine water and yeast in a large bowl and stir to mix. Allow to bloom for approx. 10 minutes.
Combine the flours in a mixing bowl, using a whisk to stir.
In a separate bowl, combine 2 cups of the flour mixture with the salt and make a well in the center. Pour the yeast mixture into the well and stir until it all comes together. If it gets to sticky to work with add small amounts of flour as needed.
Turn the dough out on a lightly floured surface and incorporate the rest of the flour, kneading and working the dough until smooth. Form into a ball and place in an oiled mixing bowl.
Cover with plastic wrap and proof until dough ball doubles in size (about 2 hours). This can also be refrigerated overnight.
When done proofing, punch down the dough and divide in half.
Bake as instructed!
