This Ethiopian Clarified Spiced Butter is like ghee, but packed full of spiced flavor!
· 1# butter, unsalted
· 5 garlic cloves, smashed
· 1 red onion, sliced
· 1 T. ginger, grated down on a microplane
· 1 tsp. turmeric
· 2 cardamom pods, whole
· 2 pieces cinnamon
· 4 cloves
· 1 tsp. black cumin seeds
· ½ tsp. fenugreek seeds
1. In a small saucepan, melt the butter gently. Skim off all of the foam that rises to the top of the pan to clarify.
2. Add the rest of the ingredients and simmer in the clarified butter for 30-40 mintes.
3. Strain the onion, garlic, and spices out through a strainer into a sterilized jar, cover and refrigerate. Use as needed.
