No Bake Brownie Balls


· 1 ½ cups runny peanut butter

· 1/3 cup maple syrup or honey

· 6 tablespoons cocoa powder

· 6 tablespoons coconut flour

· ¼ cup dark chocolate chips or chopped chocolate

· Optional: Shredded unsweetened coconut


1. Whisk together the nut butter and maple syrup in a bowl until well combined. If needed, lightly warm the peanut butter to thin it out.

2. With a spatula, stir in the cocoa powder and coconut flour.

3. Fold in the dark chocolate chips. If at this point the mixture is too sticky to touch, cover and place in the fridge for a few minutes to harden up.

4. Scoop out tablespoons of the mixture and roll into balls with your hands. If desired, roll in shredded coconut. Leave in the fridge for about half an hour to set. Store in an airtight container for unto 2 weeks. Enjoy!

Makes about 20 brownie balls
