Ingredients:
· ¼ cup preserved lemon juice
· ¼ teaspoon ground pepper
· 1/3 cup extra virgin olive oil
· ½ cup parmesan cheese, grated
· Salt to taste
· ½ pound farfalle pasta
· 1 cup frozen peas
· ¼ cup preserved lemon, chopped
· ¾ cup cooked ham, cut into ¼ inch dice
Directions:
1. In mason jar, combine preserved lemon juice, pepper, olive oil, half the cheese and a pinch of salt. Cover and shake well, set aside.
2. Bring a pot of water to boil on high heat and add 1 tablespoon salt. Add pasta and cook for 6-8 minutes.
3. When timer sounds, add peas and ham to boiling pasta water. Cook for 2 minutes.
4. Drain all together and place in a bowl. Toss with dressing and top with remaining cheese. Enjoy!
