
Ingredients:
· 1 ½ cups apple cider or rice vinegar
· 1 ½ cups water
· ¼ cup sugar
· 3 teaspoons kosher salt
· 2 red onions, thinly sliced
Instructions:
1. Place red onion in a jar.
2. Boil vinegar, water and sugar until dissolved. Add salt.
3. Pour into jar over onion and bring to room temperature.
4. Store in the refrigerator for up to two weeks.
