Ingredients:
· 2 whole sweet potatoes
· 2 tablespoons oil of your choice
· 1 tablespoon ras el hanout or seasoning of your choice
Garnish: Chopped Chives, Olive Oil
Instructions:
1. Place sweet potatoes whole, into a steamer and steam for 10 minutes to par cook*
2. Begin pre-heating grill for sweet potatoes.
3. Halve sweet potatoes and cut into long quarters, similar to large steak fries. Toss in oil and seasoning. Place on grill over medium heat, adjusting if necessary. Cook until sweet potatoes are softened and well caramelized.
4. Top with additional olive oil and chives, if desired.
*Alternately these can be baked at 425°F for 20-30 minutes. If doing this, skip Step 1 and 2.
