Roasted Corn & Poblano Salsa


Ingredients:

2 ears corn, roasted and removed from cob

1 poblano pepper, roasted and diced

½ red onion, diced

3 clove garlic, minced

¼ cup cilantro, chopped

¼ cup fresh lime juice

1 tablespoon honey

Salt & Pepper to taste


Instructions:

Roast corn and poblano peppers on the grill (for corn – keep in husk and roast until kernels start to brown).  Cut or use corn stripper to remove kernels from corn.  Dice roasted poblanos.

In a large bowl whisk together honey and lime juice.  Add all other ingredients to bowl, toss and serve with tortilla chips.  Enjoy!
