Ingredients:
· 2 T. oil
· 1 # ground beef
· 2 roasted green chiles, diced
· 1 onion, diced
· 5 cloves garlic, minced
· 4 oz. tomato paste
· 2 oz. dark chocolate
· 1 dark beer
· 3 C. V8
· 1 28 oz can fire roasted diced tomatoes
· 1 chipotle pepper in adobo
· 1-2 can(s) of beans, drained and rinsed (kidney, black, or white – choice is yours)
· ½ T. cumin
· 1 T. southwest seasoning or chili powder
· Salt and pepper
Preparation
1. Heat the 2 T. oil in a dutch oven and brown the ground beef. Remove to a bowl – keep the fat in the pot.
2. Add the roasted green chiles and onion and sweat for 8-10 minutes. Season with salt and pepper. Add the garlic and cook for 1-2 more minutes until fragrant
3. Add the tomato paste and let caramelize for 2-3 minutes. Do not let burn. Add the chocolate and let melt.
4. Add the rest of the ingredients, stir together well, bring to a boil and let simmer until thickened. Check for a final seasoning of salt and pepper.
