Salted Chocolate Chunk Miso Blondies


Ingredients:

· 8 oz. butter, browned and strained

· 1 ½ C. brown sugar

· 3 T. yellow miso paste

· 2 eggs

· 1 ½ tsp. vanilla

· 1 2/3 C. flour

· 1 tsp. baking powder

· 1 C. chocolate chunks, or bar dark chocolate cut into chunks

· 1 C. walnuts, toasted and chopped

· Smoked Sea Salt, to top (or any other coarse salt)


Method:

1. In a pan, brown the butter over low heat. The butter will separate and foam at the top. When brown, strain the browned butter into a bowl and discard the strained solids. Allow the butter to cool to a workable temperature.

2. When the butter is at a temperature that will not scramble the eggs, add the brown sugar and mix in well. Next add the miso paste, eggs, and vanilla. Mix in well. Next add in flour and baking powder gently – do not overwork – until all the flour is incorporated. Finally fold in the chocolate and walnuts.

3. Parchment line and grease an 8x8 or 9x9 inch brownie pan. Transfer the batter to the pan, top with the smoked sea salt, and place in a preheated 350 degrees oven for 30-35 minutes. Remove the brownies from the oven and allow to cool to room temperature before removing from the pan, cutting and eating. *** If using a 9x9 inch pan, adjust down your cooking time by a couple of minutes.***
