4 medium zucchini
1 pound tomatoes, cut into wedges (or halves if using cherry tomatoes)
1 cup green olives
½ cup green onions, sliced
2 tablespoons preserved lemons, finely chopped
3 ounces feta
2 tablespoons fresh oregano, chopped
1 teaspoon Greek seasoning
3 tablespoons olive oil
1 ½ tablespoons red wine vinegar
1-2 teaspoons whole grain mustard
Salt & Pepper to taste
Instructions: 1. In a large bowl, add vinegar and mustard. Whisk to combine. Slowly drizzle olive oil into bowl, whisking continuously. Once emulsified, stir in oregano, Greek seasoning, salt and pepper.
2. Using a mandoline or veggie peeler, shave zucchini into long strips.
3. Place into a serving bowl, add green onions, tomatoes, green olives, preserved lemons, feta and drizzle with dressing. Do not use all of the dressing if not necessary. Gently toss with your hands and serve!
