Known as the "king" or the "caviar" of Italian rices, Carnaroli rice is the preferred rice for making risotto in most of Italy. Similar to Arborio, Carnaroli has a high amylose content, which helps it retain both shape and texture during the long cooking time required to make authentic risotto.
