Colorado Local: Fun with Fungus (Farm) and Dave

 

Join us for this special class, where we partner up with Austen Brinker, the owner of Fungus Farm Colorado. he will start off by talking about his locally grown mushrooms; cultivation, varieties, and flavors. Then we are off to the Studio where we’ll use his mushrooms to create true, classic, restaurant style risotto. Dave will work with every group to create creamy and rich Risotto using old world technique to develop tons of character and flavor.  Each group will use a different mushroom in their risottos and then we’ll taste the difference at the end!  This is a hands-on class.  This class will be taught in our workshop format.

  • Risotto Techniques Discussion with Dave – sweating, toasting, developing starch and creaminess
  • Classic Risotto with each group using a different mushroom

  • IN-STORE CANCELLATION POLICY: All cooking classes are non-refundable. Cancellations must be made 7-days prior to your scheduled class in order to be eligible for a credit. Cancellations made less than 7-days prior to your scheduled class are non-refundable and are not eligible for a credit, unless we are able to fill the spots. Should we be able to fill the spot you will be issued a credit towards another class. Should you need to cancel within 7 days you are welcome to gift or sell the class to someone that you know on your own. All transactions must be made through you and you are required to notify us of the name and contact information of the new attendee. This policy is non-negotiable.
